Our interpretation of Valcalepio's Cabernet Sauvignon – straightforward, smooth and long-lingering with a pleasant, balsamic finish.

80% cabernet sauvignon and 20% merlot

Marly limestone soils facing south/south-west, altitude between 200 and 300 m a.s.l. Plant density of 5,500 vines per hectare, espalier training system with low spurred cordon pruning, 1.5 kg yield per plant, manual harvesting in boxes.

Traditional destemming of grapes, temperature-controlled fermentation (26-28°C) in stainless steel tanks, maceration for 24 days with pumpovers and punchdowns, malolactic fermentation in stainless steel, 12-month maturation in barrique of second passage, bottling, then resting in glass for 3-5 months.

2018 Vintage

The vintage was marked by a fairly mild winter and a regular spring. Budding took a fairly regular course, setting was good to very good, while veraison was very slow. In general, ripening followed the trend of a normal vintage. Red grape development was particularly interesting, especially for the Merlots, which presented an above-average cluster load. Harvesting began in the third week of August and ended in the first week of October. Quality was excellent quality for the white grapes, good for Merlot and exceptional for Cabernet.

Intense ruby. On the nose: black fruits, especially plum, followed by spicy notes of chocolate and leather. Rich and velvety texture.
